Rainy Day Pancake Recipe

This is a nutritionally dense, simple blender pancake recipe. It has all the flavor nostalgia and reward of your traditional pancakes with added nutrient density! This recipe uses dairy products but works just as well with dairy alternatives such as coconut yogurt and almond milk. If you have leftovers, these save great in the refrigerator and can be easily reheated or served cold topped with almond butter.

These pancakes have added protein and fat, which helps to balance out the carbohydrates and sugar (from maple syrup). However, for days with auditions or high stakes performances I recommend topping with almond butter or applesauce instead of maple syrup. Enjoy!

Rainy Day Blender Pancakes

This is perfect recipe for mornings when you want something a little sweet and comforting!

ingredients:

  • 2 cups oats
  • 1 cup yogurt 
  • 3/4 cup milk 
  • 1 ripe banana
  • 1 scoop collagen 
  • 1/2 tsp cinnamon 
  • pinch of salt 
  • 1 1/2 tsp baking powder
  • dash of vanilla extract 
  • 1 egg
  • 1 tbsp butter
  • maple syrup 

instructions:

  1. Blend together oats, yogurt, milk, banana, collagen, cinnamon, salt, baking powder and vanilla. Once well blended, add 1 egg and blend again to incorporate. 

    Melt butter in a cast iron pan. Once butter is hot pour batter into pan to form 3 pancakes. Wait until pancakes have begun to bubble and are golden before flipping. Cook to desired crispiness and then remove. 

    Serve hot with butter and your favorite topping such as maple syrup!
