Jeff's Mean Green Peanut Butter Machine Smoothie

I love a tasty smoothie; they’re quick and easy and make the perfect practice snack or meal. I regularly whip them up during the week, tossing together seemingly random ingredients from the fridge, freezer, and cupboard to make edible (and often delightful) concoctions jam packed full of flavor and nutrients. Fortunately, I’m not alone in my smoothie love. Jeff (my fiancé) and I regularly crave them, share them, and make them for each other.

The following recipe is his go to when on smoothie duty, and recently I have been craving it all the time. Depending on your own preferences, you can add or subtract different quantities to suit your preferences. For instance, I really like to taste more peanut butter, so I usually use 2 spoonfuls. I also LOVE the bright green color that comes from using more spinach, so we often just pack the Vitamix to the brim with leafy greens, which might be closer to 4 cups when all is said and done (Kale is also a delicious in this recipe).

Jeff's Mean Green Peanut Butter Machine Smoothie

ingredients:

  • 1 banana (sometimes I use a frozen banana)
  • 1 pear
  • 1-2 heaping spoonfuls Peanut Butter
  • 2-3 cups of fresh Spinach
  • 1 cup unsweetened vanilla almond milk
  • ½ cup coconut water
  • 1 teaspoon of chia seeds (optional)

  1. Throw it all in the blender and blend until smooth. Voila; A delicious green treat. Enjoy!
